If you read it as “okay, it means I am to cut off from all Jews and Christians” then you also have to cut off from Arabs because they have been described as
hypocrites
wishing for bad to happen to Prophet despite they said they believed
more likely to cross limits set by God
But as we continue reading, God tells us that good people do exist among them. We get the same thing with people of the scripture. God in the chapter is criticizing the ones who left their Books for priests. But do note that by that time Christianity already ended up splitting (sects) with one oppressing the other just like today Sunnis and Shias do to each other. Quran isn’t black and white. It explains itself. So all verses are somehow connected to one another. We have to take them into account. The irony is that today’s Christians and Jews are more faithful to Quran than Muslims.
Do note verse 5:5. It says we can eat foods made by Christians and Jews. They can eat ours. How is it possible if we cut off from them?
The chapter also shows a division in the terms:
“Jews and Christians” versus “people of Gospel and Torah”.
